Teisen Lap ( Moist Cake ) Welsh Recipe

This is another of the great cakes that come from Wales.

Ingredients

110 Gram Butter (4 oz)
225 Gram Plain flour (8 oz)
110 Gram Sugar (4 oz)
110 Gram Dried mixed fruit (4 oz)
1 Tablespoon Baking powder
1/2 Teaspoon Grated nutmeg
2 Eggs, beaten
150 ml Milk ( 1/4 pint)
Method
Makes 10 slices

Rub the butter into the flour, add the sugar, fruit, baking powder and nutmeg and stir in. Mix in the eggs and gradually stir in the milk.

Turn onto a greased 25 cm (10 inch) oven proof plate. Bake at 180 °C / 350 °F / Gas 4 for 35 minutes, until lightly browned and firm to the touch.

Cut into wedges to serve.

200g ( 8oz ) self raising flour
75g ( 3oz) butter or marg
100g (4oz) mixed fruit or coconut
30 -40 g ( 1 1/2 oz ) sugar
2 eggs 
3 tbsp milk
6 glace cherries

mix together as above or simliar   place in tim   as above
