A Trip To The Seaside In January



Sunshine beach trip in January.  Like a pair of excited kids theses two where like pocket rockets eager to get to the sea and the sand.
Off the leads they shot off towards the sea, suddenly realising there was lots of people and dogs you could see the panic across the sands. Searching for us there mummy and daddy.  Yes we are the parents of two adorable Labrador’s. Luna & Storm. A boy and girl brother and sister team. They are already a year old and you find the 4 of us joined at the hip. Sometimes it is just me with them if Simon is poorly.  These dogs have brought light into our lives. They are fantastic and fearlessly guard us with their lives especially me.  They are adorable loveable and our special friends. Meet two of the stars of the new you blog. 
A trip to Barmouth on a glorious sunshiny January day is a must.

This blog has been going for many many years. The star of my blog was once my son. Like everything in life time passes and you grow older. I love too blog write my thoughts, shared some photos and anything else I like the look of. 
It’s 2020, time to change things a little. My star of the blog has since flown the nest, doing extremely well. Yes am a very proud mum who spends some time sharing his room with his housemates as well as being home. Times change and so does life. 
I love looking back over the years at many memories we have created. The blog will keep going maybe I’ll do more on it this year. I need to take things a little easy these days, blogging is chilling relaxing and fun.
The star of my blog will no longer be my son who at 21 is a little to old these days. There are going to be new stars of this blog. The four legged kind. So look out. Here goes.
I intend to upgrade both blogs and bring them up to date.

Recipe - Butternut Squash Soup With A Spicy Hint



Rich Warming Delicious 
Topped With Crumbled Feta Cheese. 

ready in 45 minutes 

* 1 butternut squash peeled deseeded chopped (approx 700g weight)
* 3 tbsp rapeseed oil 
* 2 onions chopped 
* 2 garlic gloves chopped
* 1/4 tsp dried chilli flakes 
* 1 tsp cumin seeds 
* 1/4 tsp ground coriander 
* 900ml hot light vegetable stock 
* 100ml creme fraiche 
* 4 tbsp chopped fresh coriander 

1/ preheat oven to 200c / 180c / Gas 6. place squash in large roasting tin and add 1 tbsp of the oil. Season well and roast for 30-40 minutes until tender and lightly charred. Set to one side. 

2/ Heat the remaining oil in a large pan, add onion cook gently for 15 mins till perfectly tender. Add the garlic chilli and cumin seeds and cook for 2 mins until fragrant. Stir in ground coriander and cook for another minute or so .

3/ Add the roasted butternut squash and vegetable stock, bring to the boil and simmer for 5 minutes. 
blend the soup with stick blender or whizz in batches in food processor.
return to pan, season to taste and stir in the creme fraiche and coriander. 

if you don't fancy it hot. cut down on the chillies.

Slow Sunday Walk - Chirk Castle


Sunday Morning slow Sunday Walk was organised by local group Loving Life In Wellies. The venue was the grounds of Chirk Castle.  
It thought to myself seeing this event it would do us good a breath of fresh air and a slow Sunday walk what better to get the blood circulating.
The walk was well attended, done at your own pace. Off we trotted for a wander around the grounds of Chirk Castle. I have done this walk many times over the years. 
The walk was for well being. A gentle walk though the woodland, listening to the birds sing, the gentle wind, blustery showers and glimpses of winter sunshine.
I love walking and exploring this was a challenge for us will our health problems but we did it. Now for a evening of feet up and relaxing.
